I had SO MUCH FUN being a guest on the show The Kitchen on the Food Network. I made cookie dough pops with a recipe that is beyond easy. It’s great to do with your kiddos. They don’t contain eggs or white flour, so you can eat it straight out of the bowl and not have any guilt. You can also get super creative with the toppings. Shake it up with pistachios, different types of cereal or sprinkles- endless opportunities! Below is my recipe and some pics.
2/3 cup butter at room temperature
3/4 cup granulated sugar
1/4 cup dark brown sugar
1/4 cup applesauce
1 teaspoon vanilla extract
2 cups Almond Flour
1/2 teaspoon salt
1 cup mini chocolate chips
The topping possibilities are endless though! You can go in any direction you want.
With an electric mixer or by hand, beat the butter, granulated sugar, brown sugar, applesauce and vanilla. Slowly add in the almond flower and salt. Mix in the chocolate chips. Rrefrigerate dough for at least 20 minutes to make it easier to scoop. Using a mini ice-cream scooper, scoop the dough into little balls. Roll the dough into each topping separately, add sticks and freeze for at least 30 minutes.
For the cereal toppings; place them in plastic bag and crush to get smaller pieces.
